Do you guys do the roll of dimes method on exhaust too? Or just run a bead? Looks like exhaust welds are usually just beads. Wondering if they are too thin for nicer welds.

I think exhaust is usually done with a Tig because of thickness and control issues. I've only seen a bead. Heder flanges of course are a different story.

I would say a roll of dimes would be a little overboard

I just run a bead to seal up the connection. I don't care what it looks like as long as it doesn't leak.

Is it hard to do exhaust without burning through?

Depends on how much you overlap the two tubes. If there is a little bit of a gap that you have to fill then you may need to do quick stitches to close it up. If you try to run a bead across it you will probably blow trough.
